Ever since I stumbled upon these delectable Costco Marshmallow Crispy Cookies during one of my shopping hauls, they’ve been on my mind. Imagine a cookie that’s soft, sweet, and just a bit crunchy, reminiscent of those nostalgic Rice Krispies treats, yet wrapped in the comfort of a buttery cookie. Trust me, if you’ve had the pleasure of trying them from Costco’s bakery, you’ll understand the obsession.

How to make Costco Marshmallow Crispy Cookie

Costco Marshmallow Crispy Cookies are the latest buzz from their bakery section — a delightful hybrid combining two crowd-pleasers: sugar cookies and Rice Krispies Treats.

Ingredients

Here’s everything you’ll need to make a batch of 18–24 cookies:

For the Cookie Dough:

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

For the Marshmallow Crispy Add-Ins:

  • 2 cups mini marshmallows (or diced regular marshmallows)
  • 2 cups crispy rice cereal (e.g., Rice Krispies or a similar brand)
  • ½ cup white chocolate chips (optional, for added sweetness)

Instructions

Step 1: Prepare Your Dough

  1. Preheat your oven to 350°F (175°C)—line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and creamy (about 2–3 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 2: Mix the Dry Ingredients

  1. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  2. Gradually add the dry ingredients to the wet ingredients, stirring until fully combined. The dough will be thick—this is normal!

Step 3: Fold in the Add-Ins

  1. Gently fold in the mini marshmallows, crispy rice cereal, and white chocolate chips (if using). Be careful not to overmix at this stage to keep the textured, crispy elements intact.

Step 4: Portion the Dough

  1. Scoop 2-tablespoon-sized portions of dough (a cookie scoop works perfectly here) and place them about 2 inches apart on the prepared baking sheets.
  2. For an aesthetic touch, press a few extra mini marshmallows or Rice Krispies onto the tops of the dough balls.

Step 5: Bake the Cookies

  1. Bake in the preheated oven for 9–11 minutes, or until the edges are just turning golden brown. The centers may look slightly underbaked, but that’s what makes them soft and chewy!
  2. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Tips for Success

  • Get the Texture Right: The key to these cookies is their soft, chewy centers with crispy, crunchy edges. Don’t overbake—pull them out even if they look slightly underdone. They’ll continue to set as they cool.
  • Handle Marshmallows Carefully: Mini marshmallows can sometimes melt and spread too much. Mixing them gently and reserving a few for topping prevents this and ensures they hold their shape.
  • Chill the Dough (Optional): If you want extra-thick cookies, chill the dough in the fridge for about an hour before baking. This helps prevent spreading.
  • Storage: Store these cookies in an airtight container at room temperature for up to 4-5 days. Add a slice of bread to the container to maintain their moist and soft texture longer!
  • Experiment with Additions: While white chocolate chips are optional, you can also try butterscotch chips, dark chocolate chips, or even a sprinkle of sea salt on top for a flavor twist.

What to serve with

Costco Marshmallow Crispy Cookies are a delightful mix of chewy, crispy, and buttery textures, making them a treat that’s loved by kids and adults alike. While they’re delicious on their own, you can enhance the experience by pairing them with complementary drinks, snacks, and desserts to create an irresistible dessert spread.

1. Beverages

Since these Costco Marshmallow Crispy Cookies are sweet and rich, the right drinks can help balance or complement their flavors. Here are some excellent options:

Hot Beverages
  • Hot Chocolate: A creamy, rich hot chocolate pairs perfectly with the marshmallow components of the cookie. Top the drink with whipped cream or mini marshmallows to match the theme.
  • Coffee or Espresso: The slight bitterness of a black coffee, cappuccino, or latte balances the sweetness of the cookie. Add a caramel drizzle to the coffee for an extra indulgence.
  • Tea: Try serving with Earl Grey, chamomile, or a mild chai tea—something with subtle warming spices or calming notes that don’t overpower the cookie.
Cold Beverages
  • Milk: Classic and timeless, a glass of cold milk is the ultimate companion for cookies like these. Go for regular milk, oat milk, or almond milk based on your preference.
  • Milkshakes: A small vanilla or chocolate milkshake makes for a decadent pairing. Add a sprinkle of crushed marshmallows or Rice Krispies for a cute thematic touch.
  • Iced Coffee or Cold Brew: Perfect for hot days, the creaminess of an iced latte or sweetened cold brew complements the cookies wonderfully.

2. Ice Cream and Frozen Treats

Pairing these cookies with ice cream or frozen desserts makes them even more luxurious. Here are some ideas:

  • Ice Cream Sandwiches: Use two cookies to sandwich a generous scoop of creamy vanilla, caramel swirl, or marshmallow-flavored ice cream. For extra flair, roll the edges of the sandwich in crushed Rice Krispies or sprinkles.
  • Ice Cream Sundaes: Crumble some marshmallow crispy cookies on top of a bowl of ice cream (vanilla, cookies and cream, or white chocolate flavors work best) and drizzle with caramel or chocolate syrup.
  • Frozen Yogurt or Sorbet: If you want to cut through the richness of the cookies, serve with something lighter like lemon sorbet, raspberry sorbet, or tangy frozen yogurt.

Ingredients Substitutes

The Costco Marshmallow Crispy Cookie is a delicious take on classic marshmallow crispy treats, typically featuring marshmallows, puffed rice cereal, and butter. While the original recipe uses standard ingredients, dietary restrictions or personal preferences may lead you to explore substitutes.

Puffed Rice Cereal

Original: Rice Krispies cereal or any puffed rice cereal.

Substitutes:

  • Gluten-Free Puffed Rice: For those with gluten intolerance, opt for gluten-free puffed rice cereals.
  • Other Cereals: Use puffed quinoa, puffed millet, or cornflakes for a different texture or flavor.
  • Oats: Rolled oats or quick oats can be used for a chewier, heartier option.

Marshmallows

Original: Standard marshmallows are used to bind the ingredients and provide sweetness.

Substitutes:

  • Marshmallow Fluff or Creme: Ideal if you need a smoother, spreadable alternative.
  • Honey or Agave Syrup: Use these sweeteners if you want a healthier, natural alternative. Keep in mind that the texture will differ.
  • Vegan Marshmallows: For a vegan-friendly version, opt for brands such as Dandies, which don’t use gelatin.
  • Nut Butter with Sweetener: Combine peanut/almond butter with a liquid sweetener (like maple syrup) for a stickier base.

Butter

Original: Unsalted butter adds richness and helps set the marshmallow mixture.

Substitutes:

  • Vegan Butter or Margarine: Perfect for vegans or those avoiding dairy.
  • Coconut Oil: Adds a subtle coconut flavor and is a healthier fat alternative.
  • Ghee: Can be used for a lactose-free option with a rich, nutty taste.
  • Yogurt or Applesauce: For a lower-fat and healthier option with a slightly different texture.

I made these. They taste great. However the cookie spreads everywhere. This no shaping it. I even tried the cold version. Is that why there isn’t a cookie picture shown? It’s a bar cookie or rice krispies treat.
If I could figure out the over spreading of the cookie. I’d love to make it again.

The spreading happens due to the marshmallow and butter. It’s meant to be cut, not shaped.

If it’s meant to be cut, why do the instructions say to scoop 2 Tablespoon sized portions of dough and place them on prepared baking sheet?

Thanks for the comments, Pamela & Sarah. By “the cold version” I’m assuming you mean refrigerating the dough first? Good to know. I’m looking for a recipe for cookies, not bars.
